Eggplant Parm? Or Molly Katzen's fabulous Veg Shepherd's Pie from The Enchanted Broccoli Forest cookbook? Tho the Baba Ganoush and grilled suggestions above sounds great too (so one or two for each recipe???). I always thought I hated eggplant til a friend made me BG and I was too polite not to try it. I had seconds!
Oh, Imam Bayildi (Imam Fainted) is another winner -- but it isn't BG. It is stuffed eggplant. Supposedly the Imam fainted when his wife told him how much oil she used to cook the dish. Mmmmmmm.
