Muffin Monday: Spiced Blueberry

This week's Muffin Monday recipe comes from longtime favourite, Cooking Light. I tore this recipe out of the magazine to keep, but I can't remember if I've made it before. Perhaps, long ago, since it's from 2004!

Spiced blueberry muffins, with fresh blueberries and cream cheese in the batter! I got 18 out of the recipe.

The batter is very stiff, and as you can see, the blueberries do not all sink to the bottom. The cinnamon and nutmeg and the tanginess from the cheese, all delicious.

You cook them at 425ºF. They got quite brown here and there, but they are not overcooked. They are quite light and fluffy, in fact!

My taste-tester's initial reaction: Huh, it's a blueberry muffin.
However, she ate three throughout the evening, so I guess she liked them!
